This week’s obsession comes from one of the beautiful, friendly faces that greets you every weekend at REV: Cara!


My current obsession is roasted delicata squash. Roasting vegetables, in my opinion, is the best way to prepare them. I am also a big fan of eating what is in season and nothing says fall quite like squash

I first picked up these beauties squash1

at Trader Joe’s (my fave store!) and the super friendly employee told me to roast them. The sticker says to roast them at 400 degrees but I find that that temperature doesn’t give them enough caramelization so I roast them at 425-450 degrees for about 20min, then flip, then roast another 5min or so till they get golden brown and crunchy!

You can serve as is, or drizzle with balsamic glaze if you want to be fancy!!!

(1) First rinse them, then cut into quarters and scoop out the seeds

(2) Thinly slice and then toss with olive oil, coarse salt, and pepper.

(3) Spread evenly on baking sheet and roast at 425-450 for 20min, then flip and roast another 5min or so.

(4) Drizzle with balsamic glaze. Freakin’ delish!
